How To Make Costa Rican Gallo Pinto

Step 1

How To Prepare The Beans.

Rinse about a half package of black beans.

Put the beans in a crock pot and fill with water just enough to cover the tops of the beans. Add..

3 garlic cloves chopped

1 spoon of salt ( taste the water to be sure it is salty and if you need to add more salt ).

Stir everything together.

Turn the crock pot to high and cook the beans for about 2 hours but keep checking and make sure that the beans don't run out of water. If they run out of water add more. Make sure that the beans are covered with water at all times. Keep checking the beans and take one out to taste and see if they are soft. If they are soft like beans from a can then they are done. It takes normally 2 hours but keep checking them and if they are not done cook them a little longer.

When they are done put the beans and the juice from the beans together in the fridge overnight.

Step 2

How To Prepare The Rice.

Take a medium sauce pan and cover the bottom with oil. Chop up about a cup of onions and sweet peppers mixed.

Add the cup of onions and peppers to the pan. Cook them on medium until they are lightly golden browned.

Now take about 2 cups of uncooked rice and rinse the rice to wash off the powder that is on the rice. Add the rice to the pan. Now cover the rice with water. Add 1 spoon full of salt then stir. Cover the rice with a lid and let it cook for about 10 to 15 minutes but make sure to constantly check it to be sure it is not burning but don't stir the rice till it is totally done. To check if the rice is sticking and burning take a spoon and make a small hole to the bottom of the pan and scratch the bottom. If the spoon if catching then you need to add a little water. Taste the rice and it should not be chewy if it is done. Make sure that your rice is not clumping or you added too much water and it didn't turn out. The rice should look as you can see each grain separated. Put the rice in the fridge over night. Make sure you do not mix the rice and beans. If you make gallo pinto only take the amount you need to mix but try to always leave the rice and beans separate until you want to use them so they don't spoil.

Step 3

How To Prepare The Gallo Pinto !

Take a medium sauce pan and cover the bottom with oil. Chop about a cup of onions and sweet peppers mixed and add them to the pan. Cook them on medium until they are lightly golden brown. Put about 2 cups of the cooked beans in the pan with just enough of the bean juice to cover the beans. You will need a special sauce made in Costa Rica called Lizano Sauce. Here is the link to where you can get it - http://amzn.to/2tJWuAB .Add 1 and a half spoons full of the Lizano sauce to the pan. Stir and heat it till it is hot. Now add about 3 cups of the cooked rice. Keep stirring it till it is hot but make sure it doesn't not stick or burn. You should have about 40 percent beans and 60 percent rice when you prepare this dish. It should look separated not not clumped or you had too much water or sauce.

When it is hot your Gallo Pinto is done and ready to eat. Enjoy :)
